These Cauliflower Pizza Bites are great for adults, children, entertaining and even to pack for on-the-go quick snacks. These are a new staple in your kitchen!

These Cauliflower Pizza Bites are gluten-free, low-carb, higher in protein, guilt-free, low in fat, high in fiber and the freaking the best craving solution ever!
Guilt-Free Pizza Bites (Cauliflower Pizza Bites)
Prep time: 10 Minutes – Cook time: 25-30 Minutes
Yield: Makes 24 Cauliflower Pizza Bites
Ingredients:
- 2 Cups Grated Cauliflower (washed, dried and grated using a food processor or cheese grater by hand until rice-like or thinner – Note – Approximately one head of cauliflower)
- 1/4 Cup Egg Whites
- 1 Cup 1% Cottage Cheese (drained)
- 1 Tsp Oregano
- 2 Tsp Parsley
- 1/4 Tsp Garlic Powder
- 1 Tbsp Coconut Oil (Optional)
- 1-2 Tbsp Frank’s Hot Sauce (Optional)
Directions:
- Pre-heat your oven to 450 F.
- Using a healthy cooking oil spray your mini muffin tin.
- In a hot frying pan stir fry the “cauliflower rice” until the cauliflower is slightly translucent (about 6-8 minutes). Place in a bowl and let cool.
- Place all other ingredients the food processor and blend until smooth.
- In a bowl combine both the “cauliflower rice” and blended ingredients. Mix completely.
- Evenly spoon mixture into your muffin tin molds. Press pizza dough down evenly and firmly (*The pressing down firmly is very important to make sure these stick together).
- Place in your oven and bake for 25-30 minutes.
- Remove the pizza bites from the oven and let set until cool (This is also very important – let these pizza bites set in their pan for 5 – 10 minutes before removing – If you take them out while they are too hot they will break).
- Once cool remove from muffin tin (either by tipping them out OR by running a thin knife down along the side and popping them out).
- Use organic, natural pizza or pasta sauce for dipping (or make your own sauce- Simple Marinara Sauce link).
- Enjoy!

Tips – Here are my main tips to make your pizza bites crusty:
- Make sure your cauliflower is dry after washing.
- Bake until crust-like. If you peek at your crust at the recommended cooking time and they are not golden… cook longer.

Problem is, I believe there is a typo.. I cooked these at 450 for 25 minutes and they were burnt to the pan. I will try again at 350, These muffins are so tiny that at 450, the heat just killed them.
Hey Kathleen! Sorry that happened for you. It is not a typo your oven most run hotter than mine. I make these all the time and they always turn out perfect. Try them in your oven at 425 or 350. Hope it turns out for you. 🙂
Kathleen, I had the same problem. Then I discovered here in the comments that these were supposed to make MINI muffins, not regular ones. So I will have to give them another shot because there is no way these are edible the way I made them!
I made these today and am obsessed! I typically have an aversion to cauliflower and was skeptical as I prepared this just based on the smell of raw cauliflower. However, I am AMAZED at how good these are, and they don’t taste like cauliflower at all! I’m inspired to try all of the cauliflower recipes now! Thank you Amy!

You say half of the batch is a serving correct? That seems like a lot. 12 muffins in one sitting?
Hey Paige! Yes it is a lot 🙂 but look at the ingredients and cut it in half. This is an extremely clean recipe. You can have up to 1/2 the recipe. If you are too full, don’t have the full serving.
When I started making these, using my food processor to make the cauliflower rice, I had cauliflower all over the place, lol. But after the first bite, they were worth the mess! I think cooking cauliflower like this gives it such a beautiful sweet flavor. I loved them and will be making them again. Amy, thank you for a great recipe!

The instructions says to use pizza dough but no ingredients or directions for where that comes from. So, I just made these without pizza dough and they are pretty tasty. I added 2 tsp of Parmesan cheese & 3 tsp of real bacon bits to the final mix, which added a bit more flavor. Yum!

This sounds amazing!! I love using cauliflower to replace grains. However, this recipe calls for cottage cheese which I HATE. Can I use an alternate ingredient?
You really can not taste the cottage cheese. But if you do not mind added fat you can always use real cheese as a sub.
Can you use plain greek yogurt instead? I, too, cannot stand cottage cheese, but I don’t really like regular cheese either…

I don’t like cauliflower or Cottage cheese and I loved these! I did add in some Parmesan and mozzarella cheese to be sure they appealed to my son. We dipped them in some marina sauces and loved them. I cannot believe he ate them – let alone me!

Can I use whole eggs in this recipe or is the egg white necessary ? Also can you describe the “shaving” of the cauliflower a bit more..I’m a bit unclear as to how that works. Thanks!
Hey! You can try it with a whole egg! Go for it and see what happens. I am sure it will be fine. If you do not have a food processor you can grate the cauliflower with a hand held cheese grater. It works great!!!
I made these with whole eggs and they turned out great! Other modifications I made were: not stir-frying the cauliflower before I mixed with with the liquids; using all 4 Tbsp of hot sauce (used Cholula and they turned out great); added a half tsp of salt; used a blender instead of a food processor (which worked but my blender was definitely worn out by the end); used a regular-sized muffin tin, but only filled each cup about a third of the way, and topped each one with grated mozzarella cheese. I didn’t think they needed a marinara, but a little more hot sauce to dip them in was perfect. Thank you for the recipe

I think the reason to stir-fry the cauliflower is to take some of the water out of it.
I cooked these for dinner tonight and substituted a bit of cheddar, a bit of mozzarella and a bit of parmesan for the cottage cheese and added some diced chorizo too. Wow! So tasty and a great texture! The whole family loved them and these are now on our ‘tasty dinner list’.
I cooked them in individual silicone muffin cases and they tipped out of these so well that we could eat them piping hot with home made pizza sauce and greens on the side.

I’m on the same page as I’m dairy free. What about using tofu blended up in a food processor? That’d create thickness and still have a cheese-like flavor. Then add 2 TBS of nutritional yeast for additional flavor. I think we’d have a hit! And if using Tofu, you wouldn’t need egg then either to piece it all together in the muffin tins.

I would use Daiya cheese or another cheese substitute. I’m sure it would work well.

Daiya…. It’s a non dairy cheese tasting food. No soy either. And it actually tastes good. Think less is more with this though.

Made this last night and my whole family LOVED it! I fooled the kids-they had no idea they were eating cauliflower (: I did change it and doubled the recipe, then spread it out over a greased cookie sheet and baked for 30 min, then added our toppings and broiled. Perfectly delicious, easy and HEALTHY!

The pizza dough she is referring to is mixture made with the ingredients. It’s not an extra ingredient, it’s the product that you just prepared.
The “pizza dough” referred to in step 6 is the cauliflower mixture that you made and put into the tin molds, not a separate ingredient 😉

It sounds like your oven may have been up too high. You may have to lower the temp. They are really great. Try them again, stick with the recipe but water your oven temperature. It sounds like it may run high
Made these tonight, YUM! I used organic 0% yogurt as I am not able to have cottage cheese right now and they still turned out great. I really miss my nighttime snacks so this seriously hit the spot. Felt like I was cheating 🙂

So I’ve made these multiple times now and they get better and better! I used dry cottage cheese instead of wet and then topped them with goat cheese. I made them for my sister and her family and they loved them! Even my picky 6 year old nephew loved them! Yay for healthy meals!!!!

I just finished eating the ones I made. I wasn’t sure if I was going to love it so I only made 1/2. Unfortuneatly I forgot the eggs. I wasn’t a huge fan of the flavor, but if I enjoyed cauliflower a little more I would have loved it! Overall great recipie if you like the flavors!!

i don’t like cottage cheese either but loved these. I did use a little less cottage cheese and added a little parmesan/mozzarella cheese. I had to be sure my son would eat them, hope to slowly phase out the cheese. But I think it also might have helped keep it all together.
I made them with ricotta that I had. I drained the ricotta, but they were a bit wet in the middle. What should consistency be in the middle? Could I make with shredded motzerella cheese?
Hey Nancy! They should be cooked all the way through. It sounds like there was too much moisture in your cheese. You can either try to lower the heat and back them for longer using the same cheese or use shredded cheese.

I do not have a deep fryer , so I just fried cauliflower in cooking spray in pan. Recipe is good but the muffins seem to fall apart too easy. Any suggestions?

I made these last night for dinner and they were a HUGE hit with my family. My husband and I are doing low-carb right now, and have been missing the taste of pizza, so these were a great alternative. I added some mini pepperonis to the tops and used Italian seasoning instead of the oregano and parsley since it’s all I had. We didn’t have ANY leftovers, however it only took half a head of cauliflower to make a batch, so I have enough to make some more!

Made these for the 2nd time tonight and added the optional ingredients…no one liked the coconut oil flavor! Maybe I used the wrong kind, it was a solid coconut oil. So depressing after all that work! Hubby ate them anyway! LOL Trying again with no coconut oil and no hot sauce, adding some salt and pepper and garlic this time…also trying to make larger flat pizzas, like personal pizzas! I made the recipe tonight and have to say I was disappointed and it was a lot of work. I made the recipe in a muffin tin and eventhough i let them cook for 35 mins. they were mushy and fell apart…even after I let them cool. 🙁 I think the marinara sauce was just ok. I really wanted to like it all. I think I will try it again and spread out the dough on a cookie sheet. Sounds like that is the ticket.

I made this for my husband and two sons ages 7 and 4. I baked this both as the recipe requests- muffin version and additionally I spread out the “dough” as a mini pizza crust. The muffins at 25 minutes were still too loose inside ( I made the mistake of not draining the cottage cheese- a vital step) . At 30 minutes- much better. I put them in for 5 more additional minutes at 350. Firm. and yum!! Still waiting on the spread out version. thanks for the recipe, the family approves. Also for the kids I will leave out the hot sauce next time 😉

I just tried it… came out great in a regular sized muffin tin but I am going to double the recipe and try adding some extras like some cheese and some chicken sausage INTO them so that I don’t have to do a full pizza dough. In my experience, (I made a triple recipe), the prep time was much longer than 10 minutes, however, I have a small food processor, and using it on a triple recipe took at least an hour. Not really sure if stir frying (and cooling) the riced cauliflower was necessary, it just added a chunk of time to the prep. Half an hour + cooling time was a looooong wait after such a long prep time, and the end product was just ok. Definitely not good for a meal (as opposed to regular cauliflower pizza), but good for a snack. All in all, these were just way too time consuming for the end product. Not knocking them, just saying, in my experience, I had at the very least, 3 hours involved with them, and the end product left something to be desired.

I just made these last night. While they were tasty, they tasted nothing like pizza. I think an addition of some mozzarella cheese blend, and Italian seasoning might have helped pump up this recipe.

This was a TOTAL bust. They all stuck to the pan, despite the major cooking spray, and the outside burned while the middle wasn’t cooked. I wouldn’t recommend this to anyone.
I followed your recipe to a T and they burned all around, were raw in the middle, and stuck to the pan (despite liberal cooking spray). I am very disappointed, and would not recommend this to ANYONE.

Love this meal but wondering how the sides of yours are golden? When I pop mine out of the muffin tin, the top is golden like in it picture but my sides haven’t changed colour and a little soft.
Didn’t follow it exactly (no hot sauce, no blender, used Garlic salt rather than seasoning) and I added some extra things in it. They turned out a bit soft on the bottom, but very good! Thanks.
I baked them at 450 and that burnt the crap out of them. They also completely fell apart when I tried to pull them out. Even on the second batch when I lowered the temp, they crumbled. They were still pretty good to eat with a fork.
How do you make this without dairy or eggs? anyone? Tried last night using Go Veggie but it tasted disgusting. Also don’t want “product”. I prefer shoe food even if it’s using nuts as chefs or pesto. Has anyone tried using flax seeds or an alternative to dairy?
for egg, you can always sub 1 T flax meal plus 3 T water per egg. Just mix the two, and let sit a few minutes, and it will thicken. Just add in as you would an egg. you could use almond or coconut milk for the milk.
sorry, I just re-read the recipe and realized there is no milk, but cottage cheese. Not sure what you would sub that is dairy free.

Made these last night. I didn’t have Oregano and Parsley so I substituted 1 tsp of Chef Paul Prudhomme Pizza and Pasta Magic. I also cooked up about 1/3 a cup of turkey sausage and blended it up fine and added that as well. I also used 1 tbsp. of the hot sauce. They were AMAZING!!!! Not sure how we would have liked them without the sausage though. To me they had more of an egg and potato flavor than a pizza flavor though (could be because of the breakfast sausage) Although, there is definitely an egg taste. Sooooo Yummy!!!

i followed this recipe, which says it yields 24 muffins, but it barely stretched into muffins, and they were really thin…what did i do wrong?

Made these tonight and they taste great but… they became sort of hollow and “lacey” (that’s the best term I can think of) as they baked. Where did I go wrong? Baked too long? Cooked too much moisture out of the cauliflower? I’d love to make them again.

awesome! First make sure your cauliflower is really dry. Second once you have everything mixed together let it set for a few minutes before scooping into the tin and baking. Third make sure you grease your pan well. Coconut oil works great!

Great idea and nice flavor, although I had a hard time cooking the cauliflower “rice” without burning it, and once in the oven the bottoms and sides burned after only 15 minutes (the pan was well coated and they didn’t stick).
Is there a cottage cheese substitute? I want a no dairy low sugar low carb low cal option.

I see some of the comments where people are having trouble with the muffin tins. I always use a baking sheet with parchment paper. You don’t get the cute shape of the muffins, but they come out very good.
Do you know of an alternative for egg whites? I’m allergic to them but would love to try

Just made these and although I had to scrape them out and partially ruin my muffin tins, they were DELICIOUS. My kids loved these and I honestly didn’t think they needed sauce. I do have a couple of tips though:
1. These make 12 regular-sized muffins, 24 mini.
2. I used the whites of 3 large eggs for 1/4 cup.
3. I added salt and pepper to the batter.
4. I only used 1 tbsp of hot sauce and did include the coconut oil.
5. I added an extra 1/4 tsp of garlic powder, don’t do that! 1/4 tsp is perfect.6. Grease your muffin tins VERY well. Mine stuck on the bottom using cooking spray.
7. Twenty-five minutes was a bit too long, the edges of mine got burnt. I don’t know how long exactly would be good, unfortunately I left them unattended for the 25 mins.
With the coconut oil, MyFitnessPal calculated 40 calories per bite.
