Coconut lovers unite!
These Vegan MOUNDS BAR Brownies are a dream for anyone who loves coconut, chocolate and easy-breezy desserts. This recipe takes little-to-no effort to toss together and tastes so delicious.
These no-bake chocolate fudge coconut brownies are rich, chewy and super satisfying. They are created with all-natural, whole ingredients that add fiber and nutrients to these delicious little treats.
The bottom layer is a coconut almond no-bake brownie that is chewy, sweet with a hint of salt. The top layer is a dark chocolate chewy fudge. It is a combination made in coconut heaven!

Ingredients:
- 1 Cup Raw Sliced Almonds (Whole are find - just pulse them before)
- 1/2 Cup Fresh Large Pitted Medjool Dates (Pre-Chopped)
- 2 1/2 Cups Shredded Coconut
- 2 tsp Vanilla Extract
- 1 Tbsp Coconut Oil
- Pinch of Sea Salt
- 10 Drops Liquid Stevia (This is only an option if you have a sweet tooth - it is not necessary. You could also use 1-2 tbsp of coconut sap or maple syrup instead of stevia if you wish)
- 2 Cups Pitted Super Fresh Medjool Dates
- 1 Tbsp Coconut Oil
- 2 Tbsp Cocoa
Directions:
- Line an 8x8 baking dish with parchment paper (I used mini load molds to create this recipe this time - if you choose to do this just make sure you use a silicone version so you can easily remove your bars).
- Place all coconut layer ingredients into your food processor and pulse until mixed. Using your hand - test the mixture to see if it sticks together. If it doesn't add 1-2 tbsp of water to the mixture and pulse again.
- Place coconut mixture evenly into your parchment lined pan and press down (placing this in the freezer while preparing the chocolate fudge ingredients makes it easier to spread the next layer on top).
- Place chocolate fudge ingredients into your food processor and blend until smooth.
- Spread chocolate fudge ingredients over your coconut layer (I used my hands for this as it made spreading out the fudge easier).
- Place in the freezer for at least 3 hours.
- Remove from freezer, cut into slices and enjoy immediately.
- Store in a sealed-tight container in the refrigerator or freezer.
