Those who like lemon like it a lot. Lemon in recipes for me is a sign of Spring. There’s something fresh and awakening about lemon that always seems to find its way into my kitchen when Spring is here.
Lemon + coconut + creamy caramel = heavenly goodness.
These Vegan Lemon Coconut Truffles take only moments to make and are sinfully delicious. They can be used as a treat or even as a snack.
They are wonderful fuel for pre-workout.

This recipe is vegan, raw, gluten free, no-bake, dairy free, no added sugar and make with whole, all-natural ingredients.
Ingredients:
- 15 Large Soft (Fresh and Pitted) Medjool Dates
- 1 tsp Vanilla Extract
- 3/4 tsp Lemon Extract
- 1 Tbsp Fresh Lemon Zest
- 1/2 tsp Fine Sea Salt
- 1 Tbsp Coconut Oil
- 2 Tbsp Natural Pure Almond Butter
- 10 Drops Liquid Stevia
- 2 Handfuls Unsweetened Shredded Coconut
Directions:
- Place all ingredients except your shredded coconut into your food processor and blend until smooth stopping to scrape down the sides (keep blending and scraping until the mixture is smooth and dough-like).
- Line a bowl with saran wrap and scrape caramel dough into it.
- Place in the freezer for 1 hour.
- Cover a large plate with parchment paper or saran wrap.
- Place shredded coconut in a bowl.
- Remove caramel dough from the freezer and using a melon baller or just a spoon and your hands roll into 1 inch balls.
- Dampen your hands a little with warm water.
- Roll each individual ball in your hands and then roll with a spoon into your shredded coconut pressing down gently.
- Place truffles in a sealed tight container and store in the freezer.
- Keep caramels in the freezer or refrigerator in a sealed tight container until ready to enjoy as there are no preservatives in this recipe.
