These Vegan Grilled Cheese Sweet Potato Sandwiches are a twist on the classic grilled cheese with a sweet kick. These little sandwiches satisfied my cravings for a greasy delicious grilled cheese sandwich.
This recipe is super easy to make, is super filling, has wonderful nutrients in the sweet potatoes and is dairy free.
For the cheese I used Daiya shredded cheese but their slices would have worked even better.
I have also done this recipe spicing the sweet potatoes with a chipotle and lime spice. They also turned out amazing. The spice I used was a mix from Epicure. If you like chipotle flavored sweet potato fries you will enjoy this twist.

Ingredients:
- 1-2 Large Sweet Potatoes
- Daiya Shredded or Sliced Cheese
- 1 tsp Melted Coconut Oil
- Salt and Pepper (and/or Chipotle Spice)
Directions:
- Pre-heat your oven to 425F.
- Cut sweet potato into bread-like slices approx. 1/2 inch thick.
- In a bowl coat sweet potato slices with melted coconut oil, salt and pepper.
- Place in a single layer on a parchment lined baking sheet.
- Place in the oven and bake for 40 minutes (or until completely baked) flipping at the 1/2 way mark.
- Remove slices from the oven, add cheese to one side, top with your other sweet potato bread slice and place back into the oven for approx. 5 min or until cheese is melted.
- Remove from oven and serve.
