This recipe is Fall perfection. Add in that it is no-bake, raw and made with whole, natural ingredients and you have a dessert made in heaven.
I love making vegan cheesecakes and especially raw/vegan cheesecakes because A- I love cheesecake and B- I try to avoid dairy 99% of the time. Around 7 years ago I started studying to become a Holistic Nutritionist and was really taken back by the information regarding dairy and acne. For myself I suffered with flare ups of acne since I was about 12 years old. I was amazing at hiding it including thick bangs to cover my forehead and killer makeup techniques (really it was just caking on makeup – not cute). When I decided to commit to cutting out dairy I saw a drastic change in my skin.
I know to this day if dairy creeps back into my diet I tend to break out. So, for me, raw vegan cheesecake is what I enjoy.
This recipe came together very naturally with the abundance of BC apples here in Vancouver, BC right now. And everyone knows I love my raw vegan caramel!

This recipe is vegan, gluten free, raw, grain free, dairy free and contains all natural ingredients.
Vegan Caramel Apple Cheesecake
Prep time: 10 Minutes
Yield: Makes 4 Servings
Cheesecake Ingredients:
- 1.5 Cups Soaked Cashews
- 1/8 Cup Coconut Oil
- 1/8 Cup Maple Syrup
- 1/2 Tsp Vanilla Extract
Crust Ingredients:
- 1/2 Cup Walnuts
- 1/2 Cup Almonds
- 1/2 Cup Fresh Soft Pitted Medjool Dates
- 1/2 Tsp Cinnamon
- 1/2 Tsp Vanilla Extract
- Pinch of Sea Salt
Caramel Ingredients:
- 1/2 Cup Fresh Soft Pitted Medjool Dates
- 10 Drops of Liquid Stevia (or 1.5 Tbsp Maple Syrup, Coconut Sap, etc)
- 1 Tbsp Raw Natural Almond Butter
- 1 Tbsp Coconut Oil
- 1/2 Tsp Vanilla Extract
- Pinch of Sea Salt
Topping Ingredients:
- 2-3 Chopped Fresh Crisp Apples
Directions:
- Grease a 5 inch spring form pan (you can also use silicone moulds, muffin tins or a casserole dish) with a healthy oil.
- Place all crust ingredients into your food processor and pulse until blended with some nut texture left over.
- Press crust firmly down into pan.
- Using a clean bowl add all cheesecake ingredients into your food processor and blend until completely smooth.
- Place on top of the crust layer evenly and place in the freezer covered for 2-3 hours.
- Place all caramel ingredients into your food processor and blend until completely smooth.
- Chop apples.
- Remove cheesecake from the freezer directly before serving and top with caramel and fresh cut apple.
- Cut and serve.
