Below is a really simple, quick recipe for Sugar Free Fresh Mint Mojitos. Also below you will find a really simple variation to turn this into a Skinny Moscow Mule. I think these recipes pair perfectly with our Mediterranean Style Grilled Portobello Stuffed Mushrooms.
These recipes are super simple, toss-together and easy to change depending on your taste.
Sugar Free Fresh Mint Mojito
INGREDIENTS:
- Fresh Lime
- Fresh Mint
- Sparkling Water
- Ice
- Liquid Stevia
- Vodka (optional)
DIRECTIONS:
- In a mason jar or glass squeeze 1 lime using a hand-held citrus juicer to express the oils in the rind as well.
- Add a handful of ice, shot of vodka, a few leaves of fresh mint (muddle to release more flavor), a few drops of stevia (to taste), a slice of lime to garnish and fill with sparkling water.
- Serve and enjoy!
Skinny Moscow Mule
INGREDIENTS:
- Fresh Lime
- Fresh Mint
- Sparkling Water
- Zevia Ginger Ale (this is a sugar free stevia pop)
- Ice
- Liquid Stevia
- Vodka (optional)
DIRECTIONS:
- In a mason jar or glass squeeze 1 lime using a hand-held citrus juicer to express the oils in the rind as well.
- Add a handful of ice, shot of vodka, a few leaves of fresh mint (muddle to release more flavor), a few drops of stevia (to taste), a slice of lime to garnish, fill 1/2 with Zevia Ginger Ale and 1/2 with sparkling water.
- Serve and enjoy!
