It seems like everyone loves Oreos. The thing is that many health conscious people do not want to eat Oreos as they are. I am one of those people.
So, I’m often playing with the flavors of Oreos and creating different dessert options. I have made Raw Vegan Oreo Ice Cream Sandwiches before and also one of my all-time favorite recipes is my Raw Mint Oreo Chocolate Fudge Cake.
This week we were craving a treat and I wanted to refine my Oreo Ice Cream Sandwiches and add a mint twist! This recipe is super easy to make and contains only simple, raw vegan ingredients.

This recipe is vegan, gluten free, raw, dairy free, soy free, grain free and contains all natural ingredients.
Ingredients:
- 1 1/2 Cups Almond Flour
- 3 Tbsp Cocoa Powder
- 2 1/2 Tbsp Melted Coconut Oil
- 3 Tbsp Maple Syrup (Coconut Sap or Agave)
- Dash of Sea Salt
- 1 Cup Pre-Soaked and Drained Cashews (at least for 4 hours)
- 2 Tbsp Coconut Oil
- 3 Tbsp Maple Syrup (Coconut Sap or Agave)
- 1/2 Cup Coconut Cream
- 1/2 tsp Mint Extract
- 1/2 tsp Vanilla Extract
- Mini Vegan Chocolate Chips (optional)
Directions:
- In a medium size bowl combine your almond flour and cocoa powder.
- Add in your melted coconut oil, maple syrup and salt. Mix until chocolate dough-like.
- Place all ice cream ingredients into your food processor and blend until completely smooth.
- Using a small-medium size silicone ice cream bar mold layer your cookie, ice cream and cookie again.
- Top with mini vegan chocolate chips (if desired) by pressing them down into the top cookie layer.
- Place in the freezer for at least 3 hours.
- Remove gently from your silicone molds directly before enjoying.
