I adore brownies. The idea of peanut butter caramel brownies is heavenly to me.
When I used to eat eggs my favorite brownies were my black bean peanut butter swirl brownies. After I stopped eating eggs my favorite brownies became raw vegan blondie brownies. I use my raw vegan blondie brownie recipe as a base to many desserts including my blondie brownie salted caramel cheesecake.
This recipe satisfies my brownie and decadent treat craving without any cooking and literally takes only minutes to prepare. I also feel this recipe digests easily and I can stay on track with my Bikini Body Program goals.
This is the ultimate Healthy Rebel treat!
I have made raw vegan chewy caramel brownies coated in chocolate before that are similar to this recipe. For those of you that love chocolate this variation will be for you.
This recipe is vegan, gluten free, raw, no bake, dairy free, high fiber and made with all natural whole food ingredients.
Ingredients:
- 1 Cup Natural Almonds
- 1 Cup Natural Walnuts
- 1 Cup Fresh, Soft, Pitted Medjool Dates
- 1/4 tsp Sea Salt
- 1 tsp Vanilla Extract
- 3 Tbsp Cocoa Powder (Skip this step if you are making Blondie Brownies)
- 15 Large Soft (Fresh and Pitted) Medjool Dates
- 1/4 Cup Natural Pure Peanut Butter (If you do not like Peanut Butter flavor you can use almond butter instead)
- 1 1/2 tsp Vanilla Extract
- 1/2 tsp Fine Sea Salt
- 1 Tbsp Coconut Oil
- 10 Drops Liquid Stevia (optional - not necessary)
Directions:
- Line an 8x8 pan with parchment paper.
- Place all brownie ingredients into your food processor and pulse until as fine as you desire. Add 1-2 tbsp of water if you wish your brownie batter to be smooth instead of textured.
- Place brownie dough into the bottom of your 8x8 pan and press down evenly.
- Place in the freezer.
- Place all peanut butter caramel ingredients into your food processor and blend (stopping to scrape down the sides). Blend until completely smooth.
- Remove brownie dough from the freezer and gently spread caramel over top.
- Cover with saran wrap and place in the freezer for 3-4 hours.
- Remove brownies from freezer and cut into pieces.
- Place bites in a sealed tight container and store in your freezer or refrigerator until ready to enjoy.
