I think this recipe would be perfect for a Holiday morning breakfast or brunch. Of course, this recipe could be used as a snack as well but here are some ideas for breakfast for these yummy little bites:
The great thing about serving these for a Holiday breakfast or bunch is that you could make them the night before.
Using a mini-muffin tin to create this recipe you can place one or two of the granola cups in a bowl of yogurt, whipped coconut cream or even coconut ice cream. Top it with some chopped fruit and you have a beautiful delicious Holiday parfait! This recipe is also super yummy just on its own as a quick-to-grab meal or snack.
If you have an allergy to gluten please ensure that if you make this recipe you use uncontaminated oats.
This recipe is vegan, gluten free, super filling, satisfying and created with whole, all-natural ingredients.
Ingredients:
- 1 1/2 Cups Quick Rolled Uncontaminated Oats (or 1 Cup of Oats and 1/2 Cup of Oat Flour)
- 2 Tbsp Flax Meal
- 1/2 tsp Baking Soda
- 10-12 Drops of Liquid Stevia
- 1/2 Cup Dried Cranberries (Coarsely chopped)
- 1/2 Cup Slivered Almonds (Coarsely chopped)
- 2 Tbsp Shredded Coconut
- 1 tsp Unsalted Sunflower Seeds
- 3 Tbsp Maple Syrup
- 1 Mashed Banana
- 3 Tbsp Coconut Oil
- 1 tsp Vanilla Extract
Directions:
- Pre-heat oven to 325F.
- Spray mini muffin tin with a non-stick healthy cooking oil.
- In your food processor blend flax and 1/2 cup of oats (to create flax meal and oat flour).
- In a large bowl hand mix oats, oat flour, flax meal, baking soda, cranberries, almonds, coconut and sunflowers seeds.
- On your stovetop melt coconut oil.
- On a plate mash your banana and maple syrup together.
- Stir coconut oil, banana maple mixture, vanilla and stevia into your dry mixture.
- Mix evenly.
- Spoon mixture into muffin tin evenly and press down.
- Place in the oven and let bake until golden brown (12-16 minutes).
- Remove from your oven and place your whole muffin tin on a cooling rack for 10 minutes (this is important - let them cool).
- Using a knife gently release the sides of your granola cups and place on a cooling rack.
- Place in a sealed tight container and store in the refrigerator.
DAMY Members - 2-3 granola cups can be used for meal 2 (this is not for Bikini Body Members who are past week 4).
2 granola cups plus 1/2 cup of greek or coconut yogurt can be used as meal 2.
You can also enjoy the granola cups with coconut yogurt, coconut whipped cream or in a fruit parfait in the portion you choose for special occasions or as a treat.
