My kitchen is in full Holiday mode! This time of year brings so much inspiration for me in the kitchen.
I love playing with the different flavors of traditional holiday treats and making them into healthy Holiday options. These yummy little bites are fantastic for the Holidays.
The ice cream is a creamy coconut flavor with a hint of vanilla wrapped in toasted coconut.
They are a pop-in-your-mouth fantastic treat that looks like a winter snow ball.
I personally really enjoy the coconut toasted but you can also just use the coconut raw if you wish.
Having a container of these little snow balls in your freezer is wonderful for when you are craving something sweet but just want a little something.
For those on the Bikini Body Program or doing the Little Black Dress Challenge these can be a lifesaver. Ice cream cravings solved!

This recipe is vegan, gluten free, no-bake, grain free and made with simple all natural ingredients.
Ingredients:
- 1/2 Cup Natural Unsweetened Cashew Butter
- 3/4 Cup Coconut Cream (Pre-refrigerated prepared plain coconut cream)
- 1 tsp Vanilla Extract
- 2 Tbsp Maple Syrup (or 8 Drops of Liquid Stevia to make this sugar free)
- 10 Drops of Liquid Stevia
- 1 Cup Unsweetened Shredded Coconut
Directions:
- Place all ingredients into your food processor and blend until smooth.
- Scoop mixture into a glass loaf pan or other dish and place into the freezer for 2-3 hours.
- Over medium-low heat in a frying pan toast your shredded coconut until golden brown.
- Place in a bowl.
- Remove coconut ice cream from freezer and using a mini ice cream scooper scoop 1 inch balls into toasted coconut.
- Full coat ice cream balls with toasted coconut and place into paper cups on a plate.
- Place all prepared snowballs into a sealed tight container and store in the refrigerator.
- Enjoy 1-2 hours after preparing.
