Clean Eating Coconut Macaroons
Makes 8 Servings.
Ingredients:
- 2 Egg Whites
- 3 Packets Stevia
- 1 Tbsp Honey or Agave
- 1 Scoop Vanilla Protein Powder (Optional)
- 2/3 Cup Unsweetened Shredded Coconut
Directions:
- Preheat oven to 300F.
- Place egg whites, stevia, agave into a bowl and whisk.
- Add protein powder and shredded coconut and stir until completely coated.
- Set mixture aside for a couple moments.
- Lightly grease baking sheet or use parchment paper.
- Using a spoon place mounds spaced apart on baking sheet.
- Bake for 24 minutes.
Note – This recipe can be doubled.

Mine turned into giant coconut-egg puddles… Oops! Did I miss something that would have bpind it together better? I used protein powder! Any help would be so welcome because I can’t wait to try these again!

What kind of protein powder do you recommend?
I just made these and used vanilla protein powder. I got 9 macaroons using a tbsp to plop them on the parchment paper. As a side note, I used almost a cup of coconut and didn’t need to bake them for 24 mins, more like 15 mins instead. They taste really good.
