I guess it’s safe to say that my pumpkin kick continues! I wanted to give you a Pumpkin Spiced Version of my Secretly Healthy Peanut Butter Cookie Dough Truffles (if you haven’t tried those you must).
These truffles are great as a snack, a treat or on the side with our Vegan Version of the Pumpkin Spiced Latte with Caramel Drizzle.
If you love pumpkin having a container of these little delicious bites in your freezer is perfect this time of year. They are quick-to-grab, high fiber, nutrient dense bites that boast the wonderful flavors of Fall.
At the center of these truffles you will find the flavors of Pumpkin Pie with a hint of cheesecake then coated with a creamy, sweet, cinnamon sugar coating.

Secretly Healthy Peanut Butter Cookie Dough Balls
This recipe is vegan, gluten free, high fiber, simple and are secretly healthy pumpkin truffles.
Cinnamon Sugar Coated Pumpkin Truffles
Prep time: 1 Hour
Yield: Makes 12-18 Pumpkin Truffles
Pumpkin Truffles Ingredients:
- 1 1/2 Cups Cooked, Rinsed and Drained Chickpeas (Canned is fine)
- 1/3 Cup Pumpkin Puree (Fresh or Canned is fine)
- 3 Tbsp Coconut Oil (Room Temperature)
- 1/4 Cup Natural Maple Syrup (Agave, Coconut Sap or Liquid Stevia to taste – approx 10-15 drops)
- 1/4 Cup Pure Cashew Butter or Macadamia Nut Butter
- 1 Tsp Vanilla Extract
- 1/4 Tsp Sea Salt
- 1/2 Tsp Cinnamon
- 1 Tsp Pumpkin Pie Spice
Cinnamon Sugar Coating Ingredients:
- 1/2 Cup Macadamia Nut Butter or Cashew Butter
- 1/2 Cup Coconut Oil (Room Temperature)
- 1 Tsp Vanilla Extract
- 3 Tbsp Maple Syrup (or Agave or to make these sugar free 5-10 drops liquid Stevia to taste)
- 1/2 Tsp Cinnamon
- Sprinkle Topping – Cinnamon and Coconut Sugar
Directions:
- Place all Pumpkin Truffle Ingredients into your food processor and blend until completely smooth stopping to scrape down the sides.
- Place ingredients in a glass baking dish or loaf pan and place in the freezer for 1.5 hour.
- Remove from freezer and using a melon baller or spoon roll into 1 inch truffles and place on a plate.
- Place in the freezer for 2 hours.
- Place all Cinnamon Sugar Coating ingredients into your food processor and blend until completely smooth.
- Pour smooth coating into a bowl.
- Remove truffle balls from the freezer and dip each ball or coat evenly with cinnamon sugar coating.
- Enjoy immediately or place in a sealed tight container in the freezer for later.
- Tip: Before enjoying remove from the freezer and let set for 5-7 minutes.
