This recipe is vegan, gluten free, grain free, dairy free, high fiber, whole ingredient only, sweet and delicious.
Ingredients:
- 3-4 Firm Apples (diced)
- 1 Tbsp Fresh Lemon Juice
- 1 Heaping Tsp Cinnamon
- 1/4 Tsp Nutmeg
- 1 Pinch of Sea Salt
- 1 Tbsp Coconut Oil
- 6-8 Pitted Fresh Medjool Dates
- 10 Drops of Liquid Stevia
- 1 Tbsp Water
- 1 1/2 Cups Almond Flour
- 1/4 Cup Coconut Oil
- 1/4 Cup Maple Syrup
- 1/4 Tsp Baking Soda
- 1 Tsp Vanilla Extract
- Dash of Sea Salt
Directions:
- Pre-heat your oven to 350F.
- Place all sugar cookie crust ingredients into your food processor and blend until smooth.
- Lightly grease an 8x8 baking dish with a healthy, non-stick cooking oil.
- Press cookie dough down into baking dish and place in the oven for 8-15 minutes (watch carefully - only until golden brown).
- Remove crust from oven and let cool completely until room temperature (very important).
- If you are in a hurry you can place the crust in the refrigerator or freezer for a short while to cool down.
- Place chopped apples, lemon juice, cinnamon, nutmeg and salt into a large bowl and toss.
- Place dates, stevia, vanilla, coconut oil and water into your food processor and blend until smooth.
- Add caramel mixture to apples and coat completely.
- Over low to medium heat in a lightly greased pan place your apple mixture and cook until caramelized (10 minutes). You want your apples to be warm but still slightly firm.
- Place apple mixture over sugar cookie crust.
- Cut into squares.
- Serve and enjoy!
