Chocolate cupcakes are always a hit. I love this recipe for chocolate cupcake cravings. The mousse is a light chocolate with a dense chocolate brownie cupcake.
This is a wonderful recipe for any time of year but especially the Holiday Season.

This recipe is skinny, clean, gluten free, high fiber and a healthy version of chocolate mousse cupcakes!
Skinny Chocolate Mousse Cupcakes
Prep time: 10 Minutes – Cook time: 20 Minutes – Total time: 30 Minutes
Yield: Makes 24 Mini Cupcakes or 12 Regular Cupcakes
Brownie Cupcake Ingredients:
- 1 Can Black Beans 540 mL (Rinsed Thoroughly)
- 2 Egg Whites and 1 Full Egg
- 1/3 Cup Plain Pumpkin Puree
- 3 Tbsp Cashew Butter (or Coconut Oil)
- 1/4 Cup Cocoa Powder
- 1/8 Tsp Salt
- 1 Tsp Vanilla Extract
- 6 Packets Stevia
- 4 Tbsp Agave Nectar (or Honey)
- 1/2 Cup Dark Chocolate Chips
- 2 Cans (400 mL) Pre-Refrigerated Coconut Cream (Whipped Cream Consistency)
- 1/4 Cup Cocoa Powder
- 3 Tbsp Agave Nectar (Maple Syrup or Honey)
Directions:
- Preheat oven to 350F.
- Spray your mini muffin tin with olive oil spray.
- Place all ingredients excluding chocolate chips into your food processor and blend until smooth scraping down the sides occasionally.
- Remove blade and with a spoon stir in chocolate chips.
- Spoon batter evenly into muffin tin.
- Bake for 20 minutes.
- Let cupcakes set for 5 minutes before transferring to a cooling rack.
- Tip – Let cupcakes completely cool before icing.
- Place all whipped cream ingredients into your food processor and blend until whipped.
- Place chocolate whipped cream into piping bag and top cupcakes.
- Serve and enjoy!
Tip – If you have extra batter left place in a ramekin and bake a personal size treat.
Tip – Feel free to add chopped walnuts or almonds to these brownies.
