There has been so much chatter around the internet lately about instant noodles being so unhealthy. I sincerely thought everyone knew that. I thought we all realized that after we tried to survive on them in college.
But, there is something weird about the instant noodle that sometimes we crave. I crave that noodle/soup/salty flavor sometimes but would never eat instant noodles now that I know better.
So I came up with a guilt free way to enjoy instant noodles! I use the Shirataki Tofu noodles. These have barely any calories to them. They are low-carb and very filling. For the soup base I use a basic miso soup. Miso is something that has a lot of great health benefits and again is low calorie. If you follow DAMY you know we don’t focus on counting calories but I will put it out there that this recipe only has 70 calories. You will be shocked how filling it is!
I absolutely love this recipe and it can be thrown together in just a couple minutes. It is so comforting, filling and yummy! I hope you enjoy it too.
This recipe is vegan, gluten free, fast, low carb, low calorie, high fiber and filling.
Guilt Free Low Carb Instant Noodles
Prep time: 3 Minutes
Yield: Makes 1 Serving
Ingredients:
- 1 Package Tofu Shirataki
- 1 Package Miso Soup
Directions:
- Remove noodles from their package and rinse under water for a minute or two.
- Add boiling water to noodles and miso in a bowl to taste.
- Enjoy!

I bought these noodles. I was so excited! Made the recipe above. The noodles have such a strange texture they kind of grossed me out. Have you tried to prepare them in a way that doesn’t make them feel so rubbery? I really want to like them 🙂
Hey Jennifer! I really don’t mind them at all. I really like them. I simply just run them under hot water and rinse them really well. I add them to the hot soup and enjoy 🙂 If you do not like these try the miracle noodles. You might like those more.

I picked up the ingredients for this recipe on the weekend. I was really looking forward to trying it! The Marukome Miso Soup is unfortunately not gluten free!? Perhaps this has recently changed? The currently labeling states that there is wheat. 🙁 I was able to find an Organic Miso soup made by Edward and Sons at Safeway that would be a great substitute.

I got really excited about this thinking maybe it was a miso that didn’t contain fish and maybe just seaweed. After researching it, it does contain bonito powder, thus making the soup not vegan. http://www.marukomeusa.com/products_instant08.html
