This is our first recipe for the 21 Day Vegan Cleanse Challenge. This recipe is first for a couple of reasons. First, it will be a base to some really great creative recipes this week and second, it is really easy and filling.
You can use this in many different ways. It is so versatile, flavorful and filling! I am honestly in love with this simple recipe. Dress this as you wish or stay tuned for tomorrow’s special recipe using this veggie ground walnut meat.
This recipe is raw, vegan, gluten free, dairy free, soy free, high fiber, 4-ingredient and only takes minutes to prepare.
Raw Veggie Ground Beef (Ground Walnut “Meat”)
Prep time: 3 Minutes
Yield: 3-4 Servings
Ingredients:
- 1 1/2 Cups Raw Walnuts (ground to beef consistency in your food processor)
- 1 1/2 Tsp Ground Cumin
- 1/4 Tsp Ground Coriander
- 2 Tbsp Nama Shoyu (or Braggs Liquid Aminos/Soy Sauce or Coconut Aminos to make this 100% soy-free)
Directions:
- Mix all ingredients together in a bowl.
- Serve as desired and enjoy!

Amy – can you substitute other nuts? I don’t like the bitter taste of walnuts…
If you soak the walnuts for about 1-2 hours then rinse them, they are not bitter any more. I also do not like how bitter unsoaked walnuts are but I do like walnuts that are soaked

How to you serve this? alone?
This looks really good but it does have soy in it. It is not soy free. Braggs and Nama Shoyu are soy sauces. Your recipes are very good though!!
Hey Diana! They meat is “soy free” the Braggs and Nama Shoyu have fermented soy which most do not have a problem with. If you are looking for a soy free sauce you can use Coconut Aminos found at whole foods.
I am allergic to walnuts, but am starting a raw food lifestyle. Is there an alternative?
