This Roasted Tomato Falafel Spaghetti Squash recipe is perfect for when you are craving pasta and/or you want a filling and comforting meal that is super easy to make.
This recipe can be tossed together and enjoyed in minutes. I save extra time by purchasing my falafels at a local market.
There are a ton of great options for store bought falafels these days. Just make sure to purchase baked not fried (and reading the ingredients is a great idea).
This recipe makes two large servings so I always find we have left overs for the next day (which is an added bonus). I think of this recipe as a twist on the classic spaghetti and meatballs.
This recipe is vegan, gluten free, dairy free, high fiber, super filling, packed with nutrients, easy to toss together and extremely satisfying.

Ingredients:
- 1 Spaghetti Squash
- 2 Cups Grape Tomatoes
- 10 Falafels
Directions:
- Pre-heat oven to 350F.
- Cut spaghetti squash in two pieces. Place flat down on a baking stone or sheet and bake for 35 minutes.
- On a separate baking sheet place your grape tomatoes sliced in half and drizzles with coconut oil, salt and pepper on a parchment lined baking sheet.
- With 20 minutes remaining place falafels on a parchment-lined baking sheet and into the oven.
- Remove squash strands using a fork.
- Remove tomatoes and falafels from oven.
- Place spaghetti on serving plates, drizzle with olive oil or coconut oil, salt and pepper.
- Place tomatoes and falafels on top (to taste).
- Serve and enjoy.
