The warmer months always have me turning towards cooler foods.
This week here in Vancouver was a summer preview. It has been hot and beautiful.
This week during the day cold smoothies, frozen fruit snacks and salads have been on heavy rotation.
Yesterday I enjoyed a “Wonder Women” smoothie mid-morning (go here for the recipe) and some healthy fruit-based ice cream in the afternoon.
Both recipes were so easy and so yummy I had to share.
This ice cream recipe is smooth, sweet, creamy, vegan, gluten-free, dairy free, high fiber and so refreshing.
I will be making this strawberry ice cream all summer long.

Ingredients:
- 2 Cups Sliced Pre-Frozen Strawberries
- 1/2 Fresh Squeezed Lemon
- 5 Drops Liquid Stevia (to taste) (*optional - or maple syrup/coconut sap)
- 2 tsp Chia Seeds (*optional - also you can pre-soak these in 3 Tbsp of warm water before if you like)
- 1/2 tsp Vanilla Extract
- 3 Tbsp Raw Cashew Butter
- 1/2 Cup Pure Coconut Cream (Pre-refrigerated and solidified)
- (Protein option - you can add a protein powder to this recipe or a couple tbsp of hemp seeds to round out the protein)
Directions:
- Place all ingredients into your food processor.
- Start by pulsing ingredients.
- Blend until completely smooth ice cream texture.
- Place into a bowl and enjoy!
