This recipe’s title is a mouth full but necessary. This Flourless Peanut Butter Chocolate Chip Flax Banana Bread is incredible! And each one of those ingredients listed in the title has an equally important role (as they are basically the entire recipe).
The base of this banana bread is ground flax, bananas and peanut butter. How awesome is that?
Completely flourless and super high fibre.
The trick is to take your ground flax and soak it in 1/4 cup of warm water for 15 minutes before you start this recipe. In doing this you are creating a gooey flax egg that will hold this bread together.
For myself, I haven’t been eating processed sugar in a very long time so I found the bananas and dark chocolate chips to be enough sweetness in the recipe without adding any extra. If you know you have a sweeter tooth be sure to add some sweetness of your choosing to this recipe.
I also chose to make this in a spring-form pan over a regular loaf pan. This is due to the spring-form pan just being so much easier to remove this recipe from. Also, I used a 6-7 inch pan so that my bread was a little bit higher. I would recommend doing the same.
I hope you try this awesome recipe as it is so easy to make and it tastes so delicious. It is so good in fact that I only was able to enjoy one slice as my husband gobbled it up within a day.
This recipe is vegan, flourless, dairy free, gluten free, grain free, bean free, high fibre, super simple to make and tastes delicious.
Ingredients:
- 2 Very Ripe Bananas (Peeled)
- 1/4 Cup Ground Flax (Pre-soaked in 1/4 cup water for 15 minutes - see above)
- 1/2 Heaping Cup Peanut Butter
- 2 Tbsp Coconut Oil
- 1 tsp Vanilla Extract
- 1/4 tsp Baking Soda
- 1 Pinch Sea Salt
- 1/3 Cup Carob or Dark Chocolate Vegan Chocolate Chips
- *for those who like a sweeter taste add 1-2 tbsp of coconut sap or maple syrup (or to make this sugar free use 8-10 drops of liquid stevia)
Directions:
- Pre-heat your oven to 350F.
- Spray your spring form pan with a non-stick cooking oil.
- Place all ingredients excluding chocolate chips into your food processor and blend until completely smooth stopping to scrape down the sides.
- Evenly distribute your chips into the batter with a spoon.
- Place batter evenly into your spring-form baking pan.
- Place in the oven and bake until golden brown (25-30 minutes depending on your oven, climate and the size of the baking pan you choose).
- Check by sticking a toothpick into the center of your banana bread to ensure it comes out clean.
- Remove from oven and let sit in pan for 20 minutes (or until room temperature at least).
- Remove gently from spring form pan, cut into slices, serve and enjoy.
- Store in a sealed-tight container in your refrigerator.
