After making my Coconut Snow Balls the other day I got on an ice cream kick. My husband’s favorite ice cream is Chocolate Mint Chip so I wanted to create something I knew he would love.
This time of year I love the flavors of chocolate and mint together and these little balls are the perfect combination. These ice cream balls are colored with a secret sneaky ingredient – spinach! Don’t worry you can’t taste it. If the idea freaks you out too much you can either leave it out or use a natural green food coloring.
This recipe is best served just like ice cream – straight from the freezer and also is stored in the freezer.

This recipe is vegan, gluten free, no-bake, freezer-made, cold, creamy and delicious.
Ingredients:
- 3/4 Cup Coconut Cream (Pre-refrigerated, separated, firm cream only)
- 1/2 Cup All Natural Cashew Butter
- 1 Cup Spinach (You won't taste it - stay calm - you can use natural food dye instead of this if you wish)
- 2 Tbsp Maple Syrup (or 10 Drops of Liquid Stevia to make this sugar free)
- 8 Drops of Liquid Stevia
- 1 Tsp Mint Extract
- 1/4 Cup Vegan Chocolate Chips
- 1/2 Cup Coconut Oil
- 2-3 Tbsp Cocoa Powder
Directions:
- Place all ice cream ingredients (excluding chocolate chips) into your food processor and blend until completely smooth.
- Sprinkle in chocolate chips and stir evenly.
- Place ice cream into a loaf pan or baking dish, cover with saran wrap and place in the freezer for two hours.
- Remove ice cream from freezer and using a mini ice cream scoop or a spoon scoop mini ice cream balls onto a pre-chilled, parchment lined baking sheet.
- Place balls back into the freezer for 1-2 hours.
- Over the lowest setting on your stove melt coconut oil and cocoa together to create chocolate.
- Remove ice cream balls from the freezer and spoon chocolate over each ball.
- Enjoy immediately or place back into the freezer until serving.
