This recipe is vegan, gluten free, grain free, dairy free, simple and delicious.
Vegan Almond Macaroons
Ingredients:
- 1 1/4 Cups Almond Flour
- 1/2 Cup Unsweetened Shredded Coconut
- 1/4 Cup Coconut Oil
- 1/4 Cup Maple Syrup
- 1/4 tsp Baking Soda
- 1/2 tsp Vanilla Extract
- 1/2 tsp Almond Extract
- 14 Whole Almonds
Directions:
- Pre-heat your oven to 350F.
- Place almond flour and coconut into your food processor and blend until it is a fine powder.
- Place the rest of the ingredients (excluding whole almonds) into your food processor and blend until dough-like.
- Scoop dough onto a parchment lined baking sheet forming 1 inch balls about two inches apart.
- Place in the oven and bake until golden brown (10-13 minutes).
- Remove from oven and let set on the baking sheet on a cooling rack for 10-15 minutes (this is important to set your macaroons).
- Press gently 1 almond into each macaroon.
- Gently remove macaroons from baking sheet and place on the cooling rack until completely cooled.
- Serve and enjoy.
