This recipe came together so smoothly and simply. My husband absolutely loved it.
If you have peanut butter fans in your house this recipe is a sure win.
For this recipe I used individual single serving rectangular silicone moulds. You can use these as well or you can use a small spring-form pan, a muffin tin or any small baking dish you wish. If you are going to make one cheesecake you want to use a 6 inch spring form pan to get a thick cheesecake.

This recipe is vegan, raw, gluten free, no bake, super simple and delicious.
The Best Raw Vegan Peanut Butter Cheesecake
Prep time: 10 Minutes
Yield: Makes 5-6 Servings.
Crust Ingredients:
- 1 Cup Natural Organic Peanuts (Unsalted)
- 1/2 Cup Pitted Soft Medjool Dates
- 1/2 Tsp Cinnamon
- 1/2 Tsp Vanilla Extract
- Pinch of Salt
Cheesecake Ingredients:
- 1 1/2 Cups Pre-Soaked Cashews (for 1 hour and drained)
- 3 Tbsp Natural Organic Peanut Butter
- 2 Tbsp Coconut Oil
- 1/4 Cup Maple Syrup (or 15 Drops of Liquid Stevia)
- 1/2 Tsp Vanilla Extract
Directions:
- Lightly grease silicone moulds or spring form pan with a healthy cooking oil.
- Place all crust ingredients into your food processor and pulse until grainy-mixed texture.
- Press crust down into moulds.
- Place all cheesecake ingredients into your food processor and blend until completely smooth.
- Spread evenly on top of crust.
- Place in the freezer for 3 or more hours.
- Remove from freezer directly before serving.
- Store in a sealed tight container in the freezer.
- Tip – You can drizzle chocolate sauce over your cheesecake before serving if you wish.
