For the last few years here on the DAMY Health blog I have done at least a month long Holiday Recipe Countdown. This year I took to my Facebook page and instagram to ask for some ideas of what you would like to see on the blog this year.
I love taking your favorite meal, treats, snacks and turning them into a healthy recipe but this year the top picks were (so far):
I have already created all of these recipes! So, I’m still looking for inspiration. If you have any recipes you would like me to give my healthy spin on please leave them in the comment section below or on our Facebook page.
One request I did get was for chocolate fudge and toasted coconut. I’ve already created some great macaroons and vegan almond joy bars but these fudge bites are different. They are no-added sugar and only contain 4 simple ingredients.
Here are my favorite homemade macaroons and coconut recipes:

- Maca Superfood Macaroons (Chocolate and Blonde)
The center of these bites are rich chocolate silky fudge wrapped in a layer of crunchy toasted coconut.
They are the perfect addition to my collection of healthy Holiday Dessert Recipes.
This recipe is vegan, gluten free, no-bake, contains only 4 ingredients, no added sugar, is super easy and fast to make.
Ingredients:
- 15 Pitted Soft Fresh Medjool Dates
- 3 Tbsp Pure Cocoa Powder
- 1 Tbsp Coconut Oil
- 10 Drops of Liquid Stevia (optional - not needed)
- 1/2 Cup Unsweetened Coconut
Directions:
- Place dates and coconut oil into your food processor and pulse until completely finely chopped.
- Add in stevia here if you are using it and cocoa powder.
- Blend until completely mixed.
- On your stove top in a frying pan over medium heat toast your coconut.
- Remove from heat and place on a plate.
- Roll fudge into balls.
- Roll fudge balls into coconut pressing coconut into the fudge balls.
- Serve and enjoy.
- Store in a sealed tight container in your refrigerator.
DAMY Members - 4 Fudge Balls are a great treat option or can be used once in a while for meal 2 (serving size - 2).
